Ingredients

Adjust Servings:
SET - A ----- (Main Ingredient )
1 whole piece Chicken (1kg) With skin on
2 pieces Onion (Medium Size) Cut in half
6 pieces Garlic
SET - B ----- ( Butter Rub )
5 cloves Garlic peeled and smashed
2 tsp Sea Salt
1 tsp Onion Powder
1 tsp Garlic Powder
1/2 tsp Paprika
1/4 tsp Black Pepper
1 sprig Rosemary minced
1 sprig Thyme minced
8 TBSP Unsalted Butter / Olive Oil melted
1 TBSP Lemon Juice
SET - C ----- ( Stuffed in Cavity )
4 cloves Garlic
1 piece Lemon (whole) Half boiled and poked with fork (optional)
SET - D ----- ( Gravy )
3 TBSP Unsalted Butter
3 TBSP Flour
Left over Drippings after grilling

Steps

Preparing Chicken

- Dry up the chicken skin with kitchen towel

Rubbing Mixture

- Mix and stir SET - B all together to combine
- Rub and pour the mixture all over the chicken skin
- Push in some mixture under the skin

Stuffings

- Stuffed in all the ingredients from SET - D in chicken cavity

Tie up

- Tie up the Chicken leg with cotton thread

- Broiling/ Grilling

-Place the chicken in Grill tray
-Add the ingredients from SET -A

Option - A ( Broil & Grill )
Broil chicken for 30 min at high heat in a covered cooking pot
-Allow the chicken to drip
-Place chicken in the oven at 250C for 5 min

Option - C ( Foil & Grill )
Place the chicken in Grill tray
- Cover the tray with foil paper
- Grill the chicken in a Oven @ 180C for 1 hr

Option - B ( Grill )
- Grill the chicken in a preheated Oven @ 230 C for 1 hour

Making Gravy

- Strain pan drippings
- Remove excess oil on top
- Melt butter on medium heat
- Add flour
- Whisk until golden
- Add remaining drippings
- Simmer until smooth and creamy
