1/2 Inch Turmeric ( Fresh: if possible )

1 piece Red Chili Big
1 tsp Tamarind paste / lime juice
2 pieces Lemon Grass
1 Inch Galangal
1/2 tsp Palm Sugar
SET - C1 ------- ( Ready Made Spice Mix )
2 TBSP Fish Curry Powder
OR / SET - C2 ------- ( DIY Spices Mix )
3 tsp Coriander Powder
2 tsp Cumin Powder
1/2 tsp Black pepper
SET D ----- ( Cooking Add On )
3 TBSP Oil
5 pcs Lime Leaves
3 TBSP Tamarind Paste
700 ml Water
1 tsp Salt
SET E ----- ( Cooking Add On )
2 pcs Ladies Finger
2 cubes Tomato
2 cubes Egg Plant ( Optional )
SET - F ( GARNISHING )
2 TBSP Coriander Leaf

The assam curry uses spices but is made lighter and sourish with the addition of tamarind paste and pineapple. Fresh herbs like laksa leaves and torch ginger flower heightens the flavours. The curry is light, spicy sour that goes well with a hot bowl of steaming rice.

Steps

Blending Paste

- Blend / Make paste with all the ingredients in SET-B ingredients and little water.
- Add Coconut Milk / Water little by little while stir

Cooking Paste

- In preheated cooking pot add oil
- Add Paste ( Step -1 )
- Cook tilt paste become thick and flavorful ( 10 min )
- Add Spices MIX - SET C
- Stir & Cook for 10 min till flavor

- Add ingedients in - SET D
- Stir & Cook for 10 min till flavor
- Add Fish
- Cook for 10 min
- Add SET - E
- Cook for 5 min
